Step 1 – Prep Noodles Cook noodles in boiling salted water according to package directions. Drain and set aside. Step 2 – Make Sauce In a bowl, whisk together peanut butter, soy sauce, 1 tbsp chili oil, garlic, and ginger until smooth. Thin with 2–3 tbsp hot water to a pourable consistency. Step 3 – Cook Vegan Pork Heat 1 tbsp oil in a wok over medium heat. Add vegan pork and ground Sichuan peppercorns. Cook 5–6 minutes until browned and aromatic. Step 4 – Combine Toss noodles with sauce, then top with vegan pork mixture. Garnish with chopped green onions.
